IMPORTANT PROFESSIONS IN CHAMPAGNE

Cellarman (and fork-lift truck operator)

The cellarman receives the bottles after bottling and stacks them neatly head to tail on laths ("entreillage") in the cellars, where they will age for a period which can last several years.

When the previous years' bottles have accomplished this tranquil awakening period, the cellarman will go ahead with the following operations:
- riddling,
- disgorgement,
- dosage,
- presentation,
- packaging in cases,
- shipping throughout the whole world.

To undertake some of these operations, it is essential to use a fork-lift truck to move the bottles in order to have strict and continual stock rotation. The cellarman, therefore, often has to use a fork-lift truck.
