FROM VINES TO PLEASURE

Buying, storing, drinking and living with pleasure and health

The astonishing Doctor Tran Ky

Doctor Tran Ky has a permanent preoccupation: to share with the overall population the discoveries that the scientific world usually reserves only for academics. From your first contact with him, you are struck by the strength of his passion. A lover of history (he is the author of a historic book on South East Asia), of medicine (he is a Professor at the Royal Faculty of Medicine at Phnom-Penh and holds a university qualification in urology achieved during his studies in Paris... ), of the art of living (numerous books published on morals, wine, sexuality... ) and... of Champagne (a book: Les vertus thérapeutiques du Champagne -The therapeutic virtues of Champagne-, published in 1990 by Editions Artulen). Here is an attempt to describe a modern humanist.

The Doctor likes to explain those things, which appear fundamental in our "communication era" and to inform as many people as possible about the scientific progress of knowledge. He greatly deplores both the gulf, which separates researchers and academics and the difference between their knowledge and the ignorance in which the great majority of men are kept. There are, nevertheless, so many advantages that scientific progress could share with the population. In his opinion, this situation is a serious mistake and he will stop at nothing to simplify things in order to communicate his discoveries. "You need to talk to people in their own language, with clear images", such is his belief.

Informing as many people as possible

Such a humanist project cannot be a matter of indifference, especially when you realise the number of works that the Doctor has achieved about... the wines of Champagne! Protesting against the silence, which has always surrounded alcohol (because people confuse alcohol and alcoholism...), Doctor Tran Ky has always wished to conduct objective and serious medical research about wine, and in particular about Champagne. He is indeed responsible for lectures at the University of Reims. His work is focused on the biochemical composition of Champagne. We can learn about the formidable richness of the constituents of Champagne, resulting, according to the Doctor, from the double fermentation of this wine and the presence of carbon dioxide. Amongst other things, it contains numerous varieties of sap, glucose, multiple mineral salts, trace elements, hundreds of groups of aromatic substances, organic acids, numerous varieties of waters (because there is not just one type of water... but eighteen different molecules!), tannic substances, enzymes, fatty acids, combined amino acids, ethanols but also secondary and tertiary alcohol..., vitamins... The list is impressive without being exhaustive!

Fantastic discoveries !

Like Jules Verne or Hergé, this good Doctor is a visionary. He forecast mad cow disease in a book published as early as 1997 !
Such a fantastic discovery obtained by the detailed analyses of Doctor Tran Ky is indeed interesting for our wines of Champagne. We are going to consider two aspects in particular amongst the very numerous therapeutic virtues listed by the Doctor. The tradition of drinking a glass of Champagne after giving birth is an ancient custom. In this case, as often, the elders carried out intuitively something now confirmed by knowledge. In effect, Champagne, rich in sap and mineral salts, is a very significant and rapidly assimilated energy supply; just like a rocket at take-off, the reaction is generally swift !

Another remarkable effect of Champagne: it reduces the problems of cellulite, a dermatological complaint, which gives the skin an orange peel appearance. A daily glass of Champagne activates lymphatic circulation: the brain reacts by secreting anti-diuretic hormones, and this improves the flow of the blood. In addition, the heart also secretes hormones, which activate the circulation at cell level, encouraging drainage. Champagne hastens the disappearance of cellulite, by quite simply accentuating our ordinary body defence mechanisms. Isn't this ideal ?

The advantages of a small amount of your favourite Champagne are numerous, and we cannot help but recommend that you read the book by Doctor Tran Ky about our wines. But beware: the author limits the ideal consumption to approximately one glass, enjoyed during the evening, when the hepatic enzyme activity reaches its peak.
